Icy-Hot Radish Relish

BY: Nancy S. Hughes

Radishes are often overlooked in the produce section, but they’re appealing partners when coupled with other assertive ingredients, such as lemon rind and ginger. Serve this zingy relish alongside grilled chicken, pork or fish. Or, transform it into a vibrant salad by adding chopped orange sections and serving a scoop of it in Bibb lettuce cups.

1 cup chopped radishes (about 8 oz.)
1/4 cup finely chopped red onion
 1/4 cup chopped fresh mint
 1 tablespoon canola oil
 1 tablespoon lemon juice
 2 teaspoons grated lemon peel
 2 teaspoons sugar
 1 teaspoon grated fresh ginger
 1/8 teaspoon crushed red pepper
 Dash salt

Combine all ingredients in medium bowl. (Relish can be made 1 day ahead. Cover and refrigerate.)

 4 (1/3-cup) servings
